Oh how we love cold frozen treats. This one is so refreshingly yummy :)

Anytime Pizza


Anytime Pizza is a favorite in our home. This husband of mine is pretty crazy about it. :) In his words ( This is a DO OVER honey )

You’ll need:
2 c. Almond flour
2 eggs
2 Tb of olive oil
1 tsp salt
Mix this all up in a bowl then press it from the middle out to the edges to form a pizza crust.


Then bake in a 350* oven for 15 min.

Then spread your favorite sauce on top to your liking…..I don’t like a lot .


Then add your favorite toppings one at a time. We love spinach, mushrooms, onions, sun dried tomatoes and bacon :)
Now if you want cheese add mozzarella now…..or don’t. :)


Then bake at 350* for another 15 min.


Cutting it is a little difficult but it’s worth it. :) so GREAT!!!!! FYI…. I use a pizza cutter and then a flat metal spatula. :) enjoy

Awesomely Delicious Salad


Why go out to eat when you can make a Awesomely Delicious Salad like this at home?

I have a Confession


I have a confession to make…… I can’t cook worth a darn in the microwave :)
I had a hankerun ( that’s Okie for taste) for a boiled egg in my lunch salad and didn’t have any pre-made….. So I got the bright idea to cook one in the mic….. You can start laughing now….. Anywho….. I broke one into a glass bowl and popped it in the mic and set it for one min…. Now mind you I heard this little voice in my head saying put a cover over it and stand here and watch it BUT I walked away to put something away ….. Keep laughing….. All of a sudden I heard this LOUD POW! …… OK….. You can stop laughing now :/ what I saw was the worst mess I’ve ever witnessed in my microwave… EVER! Now before I go on, I feel the need to tell you that I first stopped and thought to my self…. Should I take a pic? ( because you all know I take pics of everything ! ) lol, but I quickly decided not to because, well, it wasn’t perfect and it wasn’t pretty at all and that made me not…. well….. Either one of those either. Visualize a LIGHT BULB over my head while washing and scrubbing out the mic….. Which btw looks great now :) …… Back to the light bulb….why do I always need to be perfect? I’m not sure, maybe because I’m a Leo or maybe because I have a self image problem or maybe I have a insecurity problem…… No maybes about it! I do :( now….. What do I need to do about it? I’m thinking I need to wash my mind with the watering of the word of God. Meditate on Gods word ( Selah… pause and think about it ) and memorize scripture and think on it so I can see myself the way God does :)

Kathleen’s Parable: Trying to be perfect is just way to hard……don’t do it.

Even though you are not perfect and even though you are insecure, God has you covered in all these areas so just learn to trust him in everything and learn to except yourself for who you are….. Flaws and all :)………. Ok Lord :) and don’t worry about what others think. It’s what God thinks that’s important :) Ok Lord :)

All this just because I goofed up an egg in the mic :) LOL.

FYI…… I’m sticking to the oven egg making system :)

Spinach Artichoke And Grilled Chicken Paleo with Dairy Style :)


Anyone know what I’m fixin? Yep, Spinach Artichoke Topping for our Grilled Chicken :) I love the Paleo with Dairy life!




4-6 Chicken breast’s butterflied and seasoned with Webber’s Kicken Chicken seasoning….( its gluten free ) love that stuff! We charcoal ours but you can also bake it. :) 350* 30 min or till done.

Spinach Artichoke Topping
8 oz cream cheese at room temp.
1/3 cup of sour cream
1/3 cup of mayonnaise
1 can of non marinaded artichoke hearts drained and smashed apart.
2 cups of fresh spinach
1/2 tsp. of garlic salt
1 tsp. of chili pepper
1/2 cup of mozzarella cheese
1/2 cup of cheddar cheese
1/2 cup of Parmesan cheese

Stir together the cream cheese, sour cream, mayo, garlic salt, chili pepper.
Then drain and smash apart the artichokes then add to above.
Then add the spinach and stir well.
Put in a oven proof dish.
Then sprinkle on the cheeses one at a time.
Bake at 350* for about 20 min then broil to brown the top for about 2 min.

When serving add the topping to the grilled chicken and watch your loved ones fall in love with ( the chicken ) oops I mean YOU all over again. 💗

Deep Dish Portobello Pizzas

3h Deep Dish Portobello Pizzas (Paleo, SCD) Sometimes you just want a big ol’ pizza. But if you’re looking to avoid the gluten gut-bomb that goes along with a typical pizza, why not try something new? I’ve made deep dish portobellos twice recently–I did it a little differently each time, but the results were the same: deliciousness. The first thing you’re going to want to do is to hollow out your portobello mushrooms, by scraping out the gills. You can use a spoon to do this. The gills are edible, but you are doing this to make room for the pizza! BEFORE AFTER You should also pop out the stem. Save it if you want (it is also edible) and chop it up and add it to your pizza with the veggies, if you feel so inclined. Here’s how I did my first deep dish portobello: I browned grassfed ground beef (sausage would be good as well) and onions. Drained the fat and added the beef and onions to some homemade pizza sauce. Filled the mushroom up with this mixture. Then I sprinkled veggies on top (peppers, olives, whatever sounds good). Then I sprinkled parmesan cheese on top. And lastly, I topped it with Applegate Farms pepperoni. I rubbed the outside of the mushroom with olive oil and baked the whole thing on 400 for about 15-20 minutes. Delish. Tonight, I got the hankering for pizza again, but didn’t have any meat thawed. So I chopped up some veggies (bell pepper and onion) and chopped up Canadian bacon and pepperoni. Then I stirred in my homemade pizza sauce, and used this mixture to fill up the mushroom. Then I sprinkled with Parmesan cheese and baked at 400 for 15-20 minutes. Again, it was really great (even though it just looks like a giant blob in the photo). And no, I didn’t even serve veggies on the side. In case you missed the memo, this is served in a GINORMOUS MUSHROOM. I think it would also be good with shredded chicken and pesto topped with provolone cheese. Oh my.
