Ramekin Egg’s Oh My!

Pre heat oven to 350*
Butter 4 ramekins and put on a cookie sheet.
In one skillet put 1 Tb butter, 1/2 a chopped yellow onion and 1 pkg of sliced mushrooms. Sauté until onions and mushrooms are tender and moisture has evaporated.
In another skillet put in 6 slices of chopped bacon. I always cut away as much fat as possible. And brown it till cooked but not to crunchy.

Next add about 1/8 c. chopped spinach in each ramekin.
Divide into the 4 ramekins the following. –
Then add the mushrooms and onions.
Then add the bacon.
Then add 2 eggs to each ramekin. Then 1 Tb of milk to each ramekin.
Pepper the eggs :)

Bake at 350* for 25-30 min.
Enjoy :)
