Sundays…. My favorite day of the week.

Sundays are my favorite day of the week. First of all we get to wake up slowly because we don’t have to be in a hurry because our church Church on the Move starts later in the am. That means snuggle time on our sectional in the den and time spent drinking his morning coffee and my fruit and protein smoothie and just good ole bonding time with this husband of mine.
Every Sunday we get to enjoy one of our four grandchild “Genevieve” run in the front door saying Mimi!!! Papa!!! And into our arms she comes leaping and smiling :) all ready to go to church! :) This morning was so fun because as she was on her way in she stops in the yard to pick one of her favorite ” flowers” and stops to blow it.


Oh what joy it is to watch her grow up. :)

Today was a crockpot Sunday. ( I really cooked it yesterday so I guess I should say SatSunday Crockpot day. ) I wanted to fix a nice juicy tender Pot Roast with onions and butternut squash and mushrooms but didn’t want to wait for 8 hours on Sunday to eat it so I chose Saturday to prepare it ahead of time. ( FYI….. its a killer smelling it all day and not getting to eat it but well worth the wait! ) I then put it in the fridge for today. This morning I got it out and chose to take off all the fat that had jelled on top ( yay! I like this idea! ) and then reheated it in the crockpot on low so that when we got home it would be all ready for us. It worked out great! I’m going to start doing this for Sundays from now on! It was absolutely perfect and so easy too. Prep work people!

I season my Rump Roast with Daddy Hinkles seasoning ( it is gluten free thank the Lord!) only not the liquid. Then brown it in bacon grease and add to the crockpot. Add 1/2 cup of water, then either sweet potatoes and carrots or butternut squash and mushrooms. I also cut up a yellow onion and put it into the crockpot first before the roast so they get cooked really good. After its done I take out all the meat and vegs except the onion and use a emulsifier/blender ( I love mine!) to brake up all the onions and add in some potato starch to thicken it. Salt and pepper to your liking :) enjoy


Lazy day dinner



My go to dinner when I don’t feel like cooking is left over grilled pork chops cut into strips with brussels and mushrooms cut into halfs sautéed in bacon grease :)

Strawberry Haven


This Strawberry Haven tastes so great and its so pretty! I know I post allot of smoothies but I just can’t help my self :) they bring out the happy in me to start my day :) Happy Saturday Y’all.


Red Robin……Yummmmmmm

Red Robin? We love Red Robin but sometimes it’s just nice to keep it at home and our money in our pockets. Red Robin is great because they can fix my food gluten free altho I am Paleo I choose to have my burgers lettuce wrapped. But in saying that I have to be truthful and say I’ve been glutened before. I think my sweet potato fries weren’t cooked in the correct gluten free fryer. How do I know this? Well believe me I do! My stomach starts to hate me with so much passion that I beg to be put out of my misery! Anywho………. My husband and I have gotten into the habit of my making up a batch of burgers and him charcoaling them for us to have on those days when I just don’t want to cook. Today was one of those days, I just grabbed a couple from our freezer and heated them up. Whipped up some sweet tatter fries because its so easy :) sweet potatoes are one of our FAV’S and so I thought I’d share my little secret with you.

Pre heat your oven to 350*
First wash and peel your sweet tatter and cut into a little bit bigger then fry size.
Lay them on a baking tray.
Melt about 1 Tb of Coconut oil and drizzle all over the fries.
Shake on sea salt and cinnamon and then toss them around to coat evenly.
Make sure to lay them all out flat and not over lapping them so they cook evenly.
Bake for 30 min. You’ll love um. ;)

I Think I’ve Found A Little Piece Of Heaven

I think I’ve found a little piece of heaven right here on earth. I was reading my WordPress fav’s and came across

Banana Manna Cakes.

. I swear, she made it look so good that if I wouldn’t have already eaten dinner I would have got up right then and there and made them! This morning it was the first thing on my mind and on my To Do list :) I ended up making the crepe 1 banana – 2 eggs ratio and added some blueberries. OMGOODNESS……HEAVEN! And of course added a side of BACON BACON! Now, my husband loves his sweets… not so much….and so he had pure maple syrup on his and he was a happy caveman. Myself…….so very….very….very happy. Thank you Becky Blue Eyes for your Banana Manna Cakes ;)


Afternoon Tea Anyone

Craving Rocky Road?


My favorite ice cream is Rocky Road. Since going gluten free then Paleo I’ve really missed my dairy. My taste buds that is….. :/ I feel GREAT! I decided I’d look for a way to make my own so this is what I came up with. Almond milk BUT next time I’m using Coconut milk, marshmallows, gluten free chocolate chips, unsweetened coconut. :) freeze milk first in a ice-cream freezer. Then add in the goodies. Put in the freezer and snack through out the week. My husband loves this one :)
