Chicken Nuggets with Honey Mustard



I went grocery shopping the other day. I was on a hunt for gluten free chicken nuggets. I’d seen a magazine ad for I think it was Tyson and thought it would be a fast easy dinner for our grands coming to stay with us for the week.

Anyways…….I searched and searched aaaaaaand searched and finally found some GF Chicken Nuggets ( but not the Tyson brand ) in a weird place far away from the normal chicken….grrrrr. Put a bag in my cart and finished my shopping. Went to the check out and then the cashier noticed that the bag had a hole in it and had someone to go get me another…….I thought oh boy this is going to take a while. I told the cashier I didn’t think he would be able to find it…..and he didn’t… anyways I just said forget it I’ll fix my own. ;)

This is what you’ll need:

Chicken Breasts
Ian’s Panko GF Original
Best Choice Seasoning Salt is GF
Spray Coconut Oil or Spray Olive Oil.

This is what I did:

Per heat oven to 350*
Pound your chicken breasts thin and the cut up into chunks.
Scramble an egg or two depending on how many nuggets your making- 2 breast’s to 1 egg ;)
Add the chicken to your eggs and set aside.
Then in another bowl add the panko ( I used almost a whole bag on two breasts ) and the seasoning salt to your taste.
Set up your dipping station near the baking pan spayed with the oil.
Dip out a few pieces of chicken at a time and add to the panko and then transfer to the baking pan one at a time till all done.
Spray the nuggets lightly with the oil and then put into the oven for 15 min.

Next, while your chicken is baking:

Add GF Mustard and your local honey together and VOILA! Honey mustard! ;)
I love that word don’t you? VOILA, VOILA, VOILA! LOL

I know…..easy smeasy …….but isn’t that the way we wanted it?

All I’ve Got To Say Is…..Chickens Are A HOOT! ;)

How is it that I can love these chickens so much? I mean really……..Talk about funny! Talk about relaxing to watch ;) and listening to their chicken chatter just blesses my heart and makes its pitter patter ;) I have a happy heart while I’m with them. It’s only been a couple of months and Randy and I are both smitten. LOL We’ve added a nice fenced in run for them to feast on worms, bugs, grass, weeds and anything I give them like watermelon, broccoli, cauliflower, carrots. I’m sure I’ll think of other things as time goes on. We also make up our own Organic and gluten free chicken feed and I have to say…..they love it! I want them to be happy and healthy chickens so they in turn will give me healthy gluten free yummy eggs. ;) I can hardly wait!



Building Our Chicken Coop

Where to begin…..Meet My Little Friend Henny Penny. She’s the smallest in our little chick family and also just happens to be the best dressed for this blog today. ;) Isn’t she CUTE!

Anyways, back to the building of our chicken coop. My husband Randy can do anything he puts his mind and hands too. He’s my very own superman hero……I wish I could insert a picture of him wearing a superman cape but I don’t have one so this one will have to do…..SUPERGIRL :)

Randy did his research and decided to build a coop for them called a tractor which they will live in until he builds the nice big one that they will live in permanently. ( I’ll be posting pics on that also when he gets it started ) Below are pictures as it progressed into a lovely home for our new family of chickens.

My,my,my this look tasty. Not sure about the black beans and corn but I’m willin to try it. Now don’t get me wrong, I love them both but my tummy doesn’t…….however if I cut back on the amount I might be able to eat it……we’ll see. ;) wish me luck!

Heavenly Paleo Banana Bread

First of all I have to give credit where credit is due. I love Civilized Caveman Cooking. ;) here is a very tasty recipe for Paleo Banana Bread that we really enjoy. The only difference is that I use Justin’s Chocolate Almond Butter. I used the Recipe builder in MyFitnessPal to get the calorie count and its 195 calories ;) serving size for the recipe is 8 so keep this in mind when slicing it up. :) here is the link:
Below are my photos of the Heavenly Banana Bread.

First add all you wet ingredients into a food processor and mix.


Then add your dry ingredients and mix again.
Pour into a glass pan and bake at 350* for 50 min.


Then cut you an 8th of a slice and enjoy while its warm. ;)
These are great heated up in a toaster oven in the morning……Just Sayin. LOL
