I love me some Salmon



Salmon……my favorite fish. Makes me smile and salivate just thinking about it. Lately it seems that I’ve been seeing it everywhere, Facebook, Tv, in my head………so last night I put some on my grill. It turned out delish as usual. I have to mention my Misto oil sprayer. I love this thing! No more unhealthy Pam spray and it chemicals. If you don’t have one run and get one at Bed, Bath and Beyond….love that place! I spray my grill pan and the salmon with olive oil and top it with my favorite seasoning and grill it for a couple minutes on med high heat per side. Since I have/need to and want to stay gluten free there will be no pasta in my kitchen……so to replace that I use lots of veg’s. I love red, yellow, orange bell peppers ( dislike the green ones….blach…. I always cut them into long pieces and add them to zucchini and garlic and a little olive oil, salt. I like fresh tomatoes too but I wait till the veg’s are almost crispy done just to warm them up and sometimes if I want the added fat I’ll add Parmesan on top after plated up. ( but not this time. :) I’m trying to lose some unwanted weight. ( too many nuts lately ).


Heavenly Paleo Banana Bread

First of all I have to give credit where credit is due. I love Civilized Caveman Cooking. ;) here is a very tasty recipe for Paleo Banana Bread that we really enjoy. The only difference is that I use Justin’s Chocolate Almond Butter. I used the Recipe builder in MyFitnessPal to get the calorie count and its 195 calories ;) serving size for the recipe is 8 so keep this in mind when slicing it up. :) here is the link: http://civilizedcavemancooking.com/grain-free-goodies/paleo-banana-bread/

First add all you wet ingredients into a food processor and mix.


Then add your dry ingredients and mix again.
Pour into a glass pan and bake at 350* for 50 min.


Then cut you an 8th of a slice and enjoy while its warm. ;)
These are great heated up in a toaster oven in the morning……Just Sayin. LOL


BBQ Chicken Oven Baked

First of all I have to say that BBQ Chicken is one of my all time favorite foods and I thank God it is one of the things I can eat with out it making me sick. That is as long as I buy free range un-glutened chicken. :/ and gluten free BBQ Sauce. ( GF Head Country Hickory Smoke Bar-B-Q Sauce ).
Pre heat oven to 350*
Add 3/4 stick of butter cut up into cubes to a glass cake pan. ( I use 2 pans )
Add your boneless, skinless, chicken breast and thighs on top of the butter cubes.
I useally split my chicken breasts ( butterfly them to make them thinner ) and thighs into two different pans to give them room to cook.
Put into oven and bake for 15 min then take out and pour BBQ sauce all over the tops of the chicken…….I poor the whole bottle :). I serve a side dish of the BBQ drippings along with the chicken . :) Yummy…… Now put the chicken back into the oven and cook for another 30 min. Chicken is done when juices run clear. I always use a meat thermometer to check my chicken.
While this is finishing up I steam my broccoli the last 15 min and also make up our dinner salad. I want to add that all the veggies shown here came from our very own garden. THIS MAKES ME HAPPY :)


Ok…….so, I made enough BBQ Chicken so we would have left overs……aren’t I brilliant? :) LOL
ANYWHO…….I heated them up for 30 min in a 350* oven and while they were reheating I put some chopped pre- cooked bacon…..brilliant again ;) ….in a pan with some green beans and heated them up too. I’d say this was a BRILLIANT dinner ;) wouldn’t you?


Satisfy Me Omelette

I’ve been set free….. That is what I was thinking to myself as I cooked breakfast for dinner tonight. I heard myself say out loud to my husband ” Randy, I feel like I’ve been set free. ” His response was, what do you mean? I said, well, I feel like since I’ve became Gluten Free and Paleo that I’m free to finally eat and cook with out fear. There’s so much freedom while cooking paleo. Eggs, veg’s, meat, herbs, butter, bacon! I’m not sick! I feel great!

Below is one of our fast go to dinners.
You’ll need:
1/4 c of chopped onions- grill first.
Then add in 5 eggs scrambled.
1/2 of a chopped seeded tomato.
1 c of chopped mushrooms.
2 handfuls of spinach.
Then stir and cook till done. Not dry. :) I leave them a little wet. ;)
Then I add the 1/4 c of shredded cheese to the top and turn off the heat and cover with lid so that the cheese melts and the eggs set up. :)
Serve with bacon….. Yes, I said BACON :)

I made my husband one happy guy with this dinner.
Assemble as shown above and bake at 350* for 30 min. Y’all enjoy 💏

Italian Mozzarella Zucchini

I have to say Zucchini is one of my very favorite veg’s to eat. I don’t miss pasta at all as long as I have Zucchini :) Its a must in my kitchen.
350* for 45 min give or take or till tender ;)



Roasted Garlic Chicken with Gravy and Green Beans

Went to Reasors and took my time roaming around, investigating all the gluten free available foods. Now, I’ve done this many time’s before but I’ve always been in a hurry and very anxious about what to look for. Today I just put everything out of my mind and just enjoyed the process. I really love my local store and feel like I’m finally learning my way around now. Today I found a couple of things that make me really happy. Grass feed beef and free range all natural chicken. I know it’s more expensive BUT my body can’t handle all the trash they feed the animals and inject into our meat products. I hate the idea that they add gluten into most meats now and that I have to be very careful and check everything first and pay more. Thank God for farmers whole grow and raise safe food to eat — at Kathleens Kitchen.

Here is one of the free range chickens I picked up today.

Garlic Roasted Chicken

1 whole chicken. I used a 4.5 pd free range chicken
2 Tb of melted butter rubbed all over the chicken inside and out.
2 Tb Tessemae’s All Natural Roasted Chopped Garlic Mediterranean or 1 whole bulb of roasted garlic smashed and rubbed all over chicken inside and out.
Salt and pepper to your taste.

Bake at : 350* for-

2.5 to 3 – 1 hour 15 minutes

3 to 3.5 – 1 hour 25 minutes

3.5 to 4 – 1 hour 35 minutes

4 to 4.5 – 1 hour 45 minutes

4.5 to 5 – 1 hour 55 minutes

5 to 5.5 – 2 hours 5 minutes

5.5 to 6 – 2 hours 15 minutes

6 to 6.5 – 2 hours 25 minutes

6.5 to 7 – 2 hours 35 minutes

7 to 7.5 – 2 hours 45 minutes

NOTE: These times are for unstuffed birds. Add 15 minutes to the total cooking time if you’re roasting a stuffed chicken. And as with the chicken itself, make sure the stuffing reaches a temperature of at least 165 degrees F (74 degrees C).

Pour juices in a fat separator and then add the juice minus the fat back into a pan. Bring to a boil and add 2-3 Tb of potato starch and stir till thickened. Salt and pepper to your taste. Pour over your chicken and enjoy.

Green Beans
I like to keep precooked bacon in the fridge so I can add them to my green beans or salads or what ever floats my boat at the time :)
