Simply Organic Chicken Fajita’s Yumolishous ;)

Todays surprise Dinner for Randy was …….Simply Organic Chicken Fajita’s Yumolishous ;)
Start by cuting your chicken into 1/4 in slices
Put them into a ziplock bag with 2Tb of olive oil and then add your (Simply Organic Chicken Fijita seasoning mix. Love this stuff!)
and put into the refrigerate for a couple of hours to marinate them.

After marinating add the chicken into a skillet with 2 Tb of olive oil on med high heat and cook them till just done. Don’t over cook them or they will be tough and dry ;( yuk!

While chicken is cooking prepare your other ingredients.

I like to use red and yellow bell peppers and onions. Cut them into strips and add them into your 2nd skillet with 1/2 Tb. of olive oil and cook them on med high heat till they are crispy done.
Cut open your avocados and slice them and spoon them into a bowl. ( these are your garnish or in my case the topping! Lol ) We also like Mexican style cheese and lettuce for toppings.

We prefer corn tortillas instead of flour….can’t do flour….have to stay gluten free ;)
So I spray olive oil on a sheet pan and lay the corn tortillas on it then spray lightly on top of them too and bake them for 5 min at 350*
They always turn out perfectly. ;)

When I first had to go gluten free I didn’t think I’d ever be able to have Mexican food again…… But when there’s a will there’s a way…right!

Chicken Nuggets with Honey Mustard

I went grocery shopping the other day. I was on a hunt for gluten free chicken nuggets. I’d seen a magazine ad for I think it was Tyson and thought it would be a fast easy dinner for our grands coming to stay with us for the week.

Anyways…….I searched and searched aaaaaaand searched and finally found some GF Chicken Nuggets ( but not the Tyson brand ) in a weird place far away from the normal chicken….grrrrr. Put a bag in my cart and finished my shopping. Went to the check out and then the cashier noticed that the bag had a hole in it and had someone to go get me another…….I thought oh boy this is going to take a while. I told the cashier I didn’t think he would be able to find it…..and he didn’t…..lol anyways I just said forget it I’ll fix my own. ;)

This is what you’ll need:

Chicken Breasts
Ian’s Panko GF Original
Best Choice Seasoning Salt is GF
Eggs
Spray Coconut Oil or Spray Olive Oil.

This is what I did:

Per heat oven to 350*
Pound your chicken breasts thin and the cut up into chunks.
Scramble an egg or two depending on how many nuggets your making- 2 breast’s to 1 egg ;)
Add the chicken to your eggs and set aside.
Then in another bowl add the panko ( I used almost a whole bag on two breasts ) and the seasoning salt to your taste.
Set up your dipping station near the baking pan spayed with the oil.
Dip out a few pieces of chicken at a time and add to the panko and then transfer to the baking pan one at a time till all done.
Spray the nuggets lightly with the oil and then put into the oven for 15 min.

Next, while your chicken is baking:

Add GF Mustard and your local honey together and VOILA! Honey mustard! ;)
I love that word don’t you? VOILA, VOILA, VOILA! LOL

I know…..easy smeasy …….but isn’t that the way we wanted it?

BBQ Chicken Oven Baked

First of all I have to say that BBQ Chicken is one of my all time favorite foods and I thank God it is one of the things I can eat with out it making me sick. That is as long as I buy free range un-glutened chicken. :/ and gluten free BBQ Sauce. ( GF Head Country Hickory Smoke Bar-B-Q Sauce ).
Pre heat oven to 350*
Add 3/4 stick of butter cut up into cubes to a glass cake pan. ( I use 2 pans )
Add your boneless, skinless, chicken breast and thighs on top of the butter cubes.
I useally split my chicken breasts ( butterfly them to make them thinner ) and thighs into two different pans to give them room to cook.
Put into oven and bake for 15 min then take out and pour BBQ sauce all over the tops of the chicken…….I poor the whole bottle :). I serve a side dish of the BBQ drippings along with the chicken . :) Yummy…… Now put the chicken back into the oven and cook for another 30 min. Chicken is done when juices run clear. I always use a meat thermometer to check my chicken.
While this is finishing up I steam my broccoli the last 15 min and also make up our dinner salad. I want to add that all the veggies shown here came from our very own garden. THIS MAKES ME HAPPY :)

Ok…….so, I made enough BBQ Chicken so we would have left overs……aren’t I brilliant? :) LOL
ANYWHO…….I heated them up for 30 min in a 350* oven and while they were reheating I put some chopped pre- cooked bacon…..brilliant again ;) ….in a pan with some green beans and heated them up too. I’d say this was a BRILLIANT dinner ;) wouldn’t you?

Roasted Garlic Chicken with Gravy and Green Beans

Went to Reasors and took my time roaming around, investigating all the gluten free available foods. Now, I’ve done this many time’s before but I’ve always been in a hurry and very anxious about what to look for. Today I just put everything out of my mind and just enjoyed the process. I really love my local store and feel like I’m finally learning my way around now. Today I found a couple of things that make me really happy. Grass feed beef and free range all natural chicken. I know it’s more expensive BUT my body can’t handle all the trash they feed the animals and inject into our meat products. I hate the idea that they add gluten into most meats now and that I have to be very careful and check everything first and pay more. Thank God for farmers whole grow and raise safe food to eat — at Kathleens Kitchen.

Here is one of the free range chickens I picked up today.

Garlic Roasted Chicken

1 whole chicken. I used a 4.5 pd free range chicken
2 Tb of melted butter rubbed all over the chicken inside and out.
2 Tb Tessemae’s All Natural Roasted Chopped Garlic Mediterranean or 1 whole bulb of roasted garlic smashed and rubbed all over chicken inside and out.
Salt and pepper to your taste.

Bake at : 350* for-

Roasting Times Chart
Weight (in lbs.)

2.5 to 3 – 1 hour 15 minutes

3 to 3.5 – 1 hour 25 minutes

3.5 to 4 – 1 hour 35 minutes

4 to 4.5 – 1 hour 45 minutes

4.5 to 5 – 1 hour 55 minutes

5 to 5.5 – 2 hours 5 minutes

5.5 to 6 – 2 hours 15 minutes

6 to 6.5 – 2 hours 25 minutes

6.5 to 7 – 2 hours 35 minutes

7 to 7.5 – 2 hours 45 minutes

NOTE: These times are for unstuffed birds. Add 15 minutes to the total cooking time if you’re roasting a stuffed chicken. And as with the chicken itself, make sure the stuffing reaches a temperature of at least 165 degrees F (74 degrees C).

Gravy
Pour juices in a fat separator and then add the juice minus the fat back into a pan. Bring to a boil and add 2-3 Tb of potato starch and stir till thickened. Salt and pepper to your taste. Pour over your chicken and enjoy.

Green Beans
I like to keep precooked bacon in the fridge so I can add them to my green beans or salads or what ever floats my boat at the time :)
